I once did a project calling extracting essential oil. You can take a look at that too. There are many ways to do it. However, you need quite a lot of roses in order to extract just a small amount. It's a fun project because you will be able to smell the fragrance later but it's time consuming.
Another idea is to look up their genetic information. I think it would be cool as well :-)
